Bocca – Italian Restaurant in the Capital Launches New Menu
The award-winning restaurant at Hilton Abu
Dhabi has launched a brand-new menu with exciting dishes from around the
world.
A brand-new a la carte menu has been launched at Bocca, the
award-winning Italian restaurant at Hilton Abu Dhabi. In addition to Chef
Leonardo Passone’s signature dishes, the new menu features a wide selection of
antipasti, soups, pastas, pizzas and desserts.Tucked
within the first floor of the historic hotel by the Corniche, Bocca is known
for offering its guests an authentic Italian dining experience defined by simple
dishes, high-quality ingredients and the passion for cooking.
The
restaurant’s Head Chef Leonardo Passone has partnered with the hotel’s
Executive Chef Walter Miculan to recreate the traditional recipes of Italy by
giving it their modern representation. Taking inspiration from the cooking
styles of their grandparents, the chefs have created a new menu at Bocca with a
focus on simplicity and premium ingredients.“We
would like to take our guests at Bocca on a journey through our homeland with
the new menu,” said Walter Miculan, Executive Chef, Hilton Abu Dhabi.
“To
guarantee the authentic flavours from back home, we have imported special
ingredients from Italy and seasonal produce from different parts of Europe.”The
new menu kicks off with a selection of antipasti which includes platters of
Italian cheeses and cold cuts, and favourites like bruschetta, Caprese and
burrata salads, prosciutto and fried calamari. The slow-cooked octopus with
marinated potatoes and seared scallops with beans puree offer a unique start to
the meal. There
are two varieties of carpaccio – tuna and beef – on offer as well. The two
kinds of soup are green peas with spinach and roasted tomato with melted goat
cheese.
“We
want our guests to have a memorable culinary experience on each visit, which is
why we have carefully curated each dish on the menu by adding our personal
touch to recipes that we enjoyed while growing up in Italy,” said Leonardo
Passone, chef de cuisine at Bocca. Offering
a taste of the classics is the range of risottos and pastas which can be cooked
in a sauce of the guest’s preference, as well as the variety of pizzas prepared
from scratch at the live dough station which faces the dining area.
For
those who want to steer away from the classics, Bocca has eight choices of
mains including corn-fed baby chicken, grilled rack of lamb and pan-fried sea
bream fillet. “A
meal is not complete in Italy until you’ve had something sweet, what we refer
to as ‘dolce’. This is as important as the main meal for us,” Walter added.
For
desserts, there is a marinated summer peach, banana panacotta, coconut
semifreddo, and the all-time favourite of patrons – the Bocca Tiramisu. Bocca
is open daily for dinner from 7pm to 11pm,
and from 12noon to 3.30pm for
lunch from Sunday to Thursday.
